Sensory Evaluation Research Laboratory celebrates five years of sensory and consumer science research

The University of Ghana Sensory Evaluation Laboratory will celebrate its 5th anniversary on the 30th September 2021.

The laboratory which was established in June, 2016 is the first ultra-modern laboratory of its kind to be established in West Africa. The main aims of the laboratory are to promote teaching and research. The laboratory also provides testing services to the food industry in Ghana and beyond.

The Laboratory was established with funds from the Skill Development Fund through the Dairy Technology Center project. Since it commissioning in September 2016 by the Vice Chancellor of the University of Ghana, Professor Ebenezer Oduro Owusu, the laboratory has trained over 40 expert food tasters, 10 sensory analysts and technicians and 3 sensory scientists. Over 50 student research projects, 30 in house research projects and 10 commercial research projects have been completed in this period. In this period also, the laboratory has built expertise in dairy products testing with specialty in fresh milk and yoghurt testing, cocoa and chocolate testing and agro-produce testing (cassava, yam and plantain). Some new methods and protocols developed in this period include using CATA to improve panel training and consensus building. Members of the laboratory also attended and presented various research projects from the laboratory at the 13th Pangborn Sensory Science Symposium in Edingbrugh in 2019. They are set to present more of their research outcomes at the upcoming 14th Pangborn Sensory Science Symposium which is ONLINE this year! A total of 4 posters will be presented this year.
