The just ended virtually held Pangborn Symposium saw great presentations from all over the world. Notable amongst them were the four poster presentations made by researchers from the University of Ghana Sensory Evaluation Research Laboratory.

Emmanuel Addo-Preko presented on scale length and its relevance to the Ghanaian consumer in Hedonic testing. In this test, the 9-point hedonic scale was compared to three other scales i.e. the 3-point hedonic scale, the 5-point hedonic scale and the 7-point hedonic scale. It was concluded that the 3-point and the 9-point hedonic scale were most suitable to use for hedonic testing in the Ghanaian context.

Cecile Wendy Aboagye presented on sensory testing during the pandemic in Ghana. In this test the feasibility of conducting Free Choice Profiling (FCP) and Quantitative Descriptive Analysis (QDA) at home were determined. It was discovered that FCP can be conducted at home if assessors are more exposed to the method and the product. QDA at home is feasible if panel has access to seamless internet connectivity.

Priscilla Ahadzi presented on the sensory profiling of frozen desserts. This was done by comparing a static profiling method like QDA to temporal methods like TDS and TCATA. Ghanaian consumers consume frozen desserts in the frozen, slushy or fluid state and these changes influence sensory perceptions. TDS and TCATA was used to design a profile (in order to derive sensory profiles in relation to time) for the various consumption states and the profiles obtained were compared to the profiles derived through QDA. TDS and TCATA were comparable to QDA in that sense and proved to be useful in capturing subtle notes in frozen desserts.

Marian Serbeh presented on exploring canning technology as an option to enhance the safety and shelf-life of Brukina. Canning technology was employed as an option to improve the safety of Brukina, predominately sold in plastic (PET) bottles. Canning maybe a feasible option to improve the safety and hygiene perception of Brukina and give an opportunity to develop new product altogether.
